Easy No-Churn Breadfruit Ice Cream
Preparation time: 20 minutes
Freezing time: 6 hours
Yield: Approximately 8 servings
Ingredients
- 1 cup cooked or roasted breadfruit, cooled and cut into pieces
- 1 can (14 ounces) sweetened condensed milk
- 2 cups cold heavy whipping cream
- 2 to 4 tablespoons coconut milk
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Pinch of salt
- ¼ cup toasted coconut flakes, optional
- Chopped pecans or almonds, optional
Preparing the Breadfruit
If you are using frozen roasted breadfruit, allow it to thaw completely before making the ice cream.
If you are starting with fresh breadfruit, roast it until the flesh is tender and can be easily pierced with a knife. Allow it to cool, then remove the skin and center core. Measure one packed cup of the cooked breadfruit.
Instructions
- Make the breadfruit mixture.
Place the roasted breadfruit, sweetened condensed milk, two tablespoons of coconut milk, vanilla, cinnamon, nutmeg, and salt in a blender or food processor. - Blend until smooth.
Blend the ingredients until the mixture is creamy and contains no breadfruit pieces. If it is too thick to blend, add another tablespoon or two of coconut milk. The finished mixture should be thick but smooth. - Whip the cream.
Pour the cold heavy whipping cream into a large mixing bowl. Beat it with an electric mixer until stiff peaks form. Be careful not to overmix it. - Combine the mixtures.
Gently fold the breadfruit mixture into the whipped cream. Continue folding until the color and texture are uniform. Avoid stirring too aggressively because this can remove the air from the whipped cream. - Add optional ingredients.
Fold in toasted coconut, chopped nuts, or both for additional flavor and texture. - Freeze the ice cream.
Transfer the mixture to a loaf pan or freezer-safe container. Smooth the top and cover it tightly with plastic wrap or a lid. - Allow it to set.
Freeze the ice cream for at least six hours, preferably overnight. - Serve and enjoy.
Remove the ice cream from the freezer and let it rest at room temperature for five to ten minutes before scooping.
Tips for Perfect Breadfruit Ice Cream
For the creamiest results, make sure the breadfruit mixture is completely smooth before folding it into the whipped cream. You can also press the mixture through a fine-mesh strainer if the breadfruit is especially fibrous.
Keep the whipping cream very cold, since cold cream holds more air and creates a lighter texture. Also, remember to use sweetened condensed milk, not evaporated milk.
For an even stronger tropical flavor, add toasted coconut, a small amount of coconut extract, or a drizzle of caramel sauce. Breadfruit ice cream is also delicious when served with sliced bananas, toasted nuts, fresh mango, or warm bread pudding.
How to Store Breadfruit Ice Cream
Store the ice cream in a tightly covered freezer-safe container. For the best flavor and texture, enjoy it within two weeks. Placing plastic wrap directly against the surface can help prevent ice crystals from forming.
